Garlic Knots

These little cheesy nuggets of wonder were actually prepared by one of my friends this past weekend, and I want to be sure to save her notes so that I can make them again in the future!  

The first night of our trip we had homemade pizza. This was perfect as it allowed us to graze throughout the night.  Waking up the next morning, we noticed that we had prepared one of the pizza doughs (knead, placed in a baking dish, and covered in plastic) but had never turned it into a pizza.  It has almost doubled in size overnight and we began brainstorming several ideas for what to do with this spare dough.  

Considering the fact that we were on an island for a weekend and were only using ingredients that we brought with us to the house, these knots were cheesy and filling!  The first batch were folded (rather than tied in a knot) which allowed for a healthy pinch of cheese to be folded into the middle.  The second (pictured) had the nice knot shape.  I will definitely make them again and continue to play around with adaptations.  

Ingredients:

  • Pizza dough (22oz)
  • 3 tablespoons butter
  • 2 cloves of minced garlic
  • 1 teaspoon italian seasoning
  • Shredded mozzarella (optional)

 

Steps and Notes:

  1. Let the dough warm to room temperature
  2. Melt 3 teaspoons of butter and add 1 teaspoon of italian seasoning and 2 cloves of minced garlic
  3. Flour a cutting board.
  4. Roll the dough into a ball and cut into quarters.
  5. Now you have a big decision – knots or folded bites stuffed with cheese.  
    • Option 1: Folded bites stuffed with cheese
      • Grab bits of dough and flatten with your palm.
      • Put some cheese in the middle and fold over
      • Press the edges to secure the cheese inside the bun
    • Option 2: Knots
      • Flatten one of the sections of dough and cut into strips. then, roll into logs about 5 inches long
  6. Cover each garlic roll with the melted butter mixture and then sprinkle with cheese
  7. Bake @ 375 for 20 minutes

 

Thoughts for Next Time:

  • Add grated parmesan cheese to the butter mixture
  • Make a warm cheesy dipping sauce
  • Make a red pizza-style dipping sauce
